Salsa muffins

I came home from work and needed something to do while I waited for Project Runway to start.  First, I grabbed the peppers out of the fridge that one of my customers gave to me and made some salsa.  I had hot banana peppers, habanero and Thai chilies.  After dicing the peppers and very thoroughly washing my hands, I added in some tomatoes, cumin, garlic salt and oregano, it was spicy, but good.  What next, that was quick, baking sounds good.  I usually bake something at least once a week, mostly cookies to share at work, but today, muffins with a little twist sounded interesting. 

I paged through my library of cookbook and came across a recipe that was called Pesto Surprise Muffins.  Mm...but I don't have any pesto, what to do...I just made salsa, would that work?  I made the recipe and made two substitutions instead of Parmesan I subbed cheddar and used my homemade salsa instead of the pesto.  They turned out good, but next time I might add a bit more salsa and cheese and just a little more oil.  After they cooled, I made a cheesy butter to put on them.  Very tasty!  The recipe below is the exact one I used.


Salsa Muffins & Cheddar Butter

Recipe for Salsa Muffins
2 Cups flour
Approx. 3 Tbls. finely shredded cheddar
1 Tbls. baking powder
1/2 Tsp garlic salt
1/4 Tsp cumin
1 Cup milk
1/4 Cup vegetable oil
1 Egg
1/4 Cup salsa - blended until only small chunks remain

Preheat oven to 400*F and line a muffin pan with paper baking cups

Combine flour, 2 Tbls of the cheddar, baking powder and garlic salt in a large bowl and set aside.  Combine milk, egg and oil in a small bowl.  Stir into flour mixture just until moistened.  Spoon into muffin cups and fill about half way.  Drop a teaspoon of salsa on top of batter in each cup and fill with remaining batter.  Sprinkle the rest of the cheese on top.  Bake for about 25 minutes or until toothpick comes out clean.

Your salsa can be as hot or as mild as you like, mine was very spicy.  For the butter, I softened a 1/4 cup and added about 2 Tbls of the cheese.

Heartthrob Cafe Memories

The best job ever and the coolest friends that I ever had were when I worked at a restaurant called the Heartthrob Cafe.  It was in downtown St Paul, Minnesota and was so fun!  Today we had a get together to catch up and reminisce.  This is one of the many good things about facebook, finding people that you wished you never lost contact with.  So, today my post is the buttons that I made for this event.  We had 'flair' that was a lot more fun and cool than a restaurant chain that I will not name here.  We danced and sang birthday songs.  The girls wore poodle skirts and we did all of this while wearing in line skates.  We were a crazy family and honestly this was one of the best times in my life.  Ahhh...memories. Pansy Pig

This is the second time that I have found a pig cutting board to use as a canvas for my painting.  This one is slightly larger than the previous one and also has a cute curly tail.       It cost 1.49 at the Goodwill, one of their weekly specials.  Every Tuesday they feature a different color of tag and anything with that color is 1.49.  I love Tuesdays!   Instead of another block design, I decided to paint pansies only in colors that they don't naturally grow.  I have mentioned my preference for things in black and white, but, red is a color that is next on my list of favorites.  The flowers really jump out at you in this project.  My next step is where to put her.  Ah, decisions.  Happy Creating!

Cocktail Coasters Part One

  What a beautiful day!  Read the Sunday paper, went for a walk, relaxed and painted.  I actually painted outside to fully take advantage of the weather.  Since tropical things are on my mind because of yesterday, the project for this post is featuring refreshing summer beverages.  This set of coasters is from a great thrift store and cost 1.91, what a bargain.  The original style is definitely from the seventies.  At first the plan was to make each coaster a different color, but that just didn't work.  A neutral color worked much better with the colorful cocktails.  With the distraction of the weather only three and the holder were finished today.  The others should be done for tomorrow. Hmm...why does a margarita sound good right now?
